yes, these are all possible, in some cases using the theme options, or otherwise with the helpful guidance of the moderators of the forum.
You can remove the footer credit, and use the theme on multiple sites, also when you purchase a single license. iThemes licensing has changed to GPL last year, so probably the site you went to for information has not been updated. I will look into that with the tech guys.
