I am trying to match the look and feel of the current "Thesis" theme site. www.skinesthetics.com
My additional challenge is to get it working so that the sidebar uses the Product Category widget and the main content area only shows the products. The side bar would need to have a unique set of widgets while in the shop/products pages and a different set while in the rest of the site pages. I believe that I've found a programmer to help customize this, but it would be nice if this was possible to do in the theme settings so I don't have to hire for this customization.

Market and Depot theme have integrated page templates for the wp e-commerce plugin, to ensure a uniform and integrated look, which other themes do not have. So that means that you need to do the integration "manually". Wp e-commerce will work on other themes, but will require you to create the page templates for products, categories, checkout etc, as you would do on any other WordPress theme. As far as look and feel, I think you best try out the demo sites, and see what you like best.
Builder theme (the framework powering our child themes) allows you to specify widgets per layout, or per page. Alternatively, the widget logic plugin is designed to enable different widget content on different pages,
hope this helps,
