I would like to know if it is possible to customize the look & feel of your plugins, like Slides, without breaking compatibility or updates. For example, I would make it so the Slides with text on the left is actually overlayed on the picture. Is this possible with CSS overriding maybe? Are such changes supported?

It is definitely possible to customize the plugins. If you can make the changes you'd like using CSS you add to your theme's stylesheet, we'd recommend doing instead of in the plugin itself. While you can definitely make any changes you'd like to the plugin itself that you'd like, if you update the plugin, it will overwrite any changes that you've made.
As for breaking compatibility - again, you can make any changes to the plugin that you'd like, but we won't know if it breaks compatibility until we know exactly what changes it is that you're making!
