I'd like to know if Exchange supports customizing the checkout page with additional required fields. As an example,I'm looking at using exchange for taking registration for a basketball tournament. Additional fields needed would include player names, team name, team category, and acceptance of terms and conditions. I'm going to download and start tinkering, but wanted to see if the ithemes crew had any advice, ideas.

There isn't a setting in Exchange that allows you to do this. If you feel comfortable, however, you are obviously welcome to make the edits to your registration form.
I would advise you that, when you make changes like this, remember that it appears in two separate areas. For instance, there is the actual registration page and then there is also the registration form in the Super Widget. You'd find both directories in /lib/templates/ (the directories are content-registration and super-widget-registration).
