UPDATES:

I sometimes think posting to the forum is like therapy :-) and a time to let go of frustrations.

As I typed out and thought through the post I deactivated some plugins and the site is running much better.

I think Ultimate Shortcodes was the problem.

I also create  page for /store vs using the default.

The product options and shopping cart are working great now

Still a bit slow even after caching???

I'll probably move the site to a faster server later today or this weekend.

I'm working on a volunteer project for an upcoming fund raising event

Sorry this is a non-iThemes theme and I started using WooCommerce but it's way too difficult.

So I setup Exchange last night all was working great.

I updated hardcoded links in Boom bar and others to /store per Exchange default settings.

Today the /store link doesn't work but individual product links work?

This may be a separate topic but the variants are working very well either:

This page is for t-shirt with a drop down for sizes and variable prices but they don't change very quick.

This page is for a guitar raffle and if you pick the 3 for $50 and click add to cart it sometimes is $20 and other times is $50???

Question: So I want to ask before I spend hours trying other themes, or creating WordPress pages for the store or do I need other plugins???

I have a lot of time in the theme so I don't want to switch.

If I create a WP page and use short code will that overcome the /store not working when it was last night?

Are the variants and drop downs having problems with Java Script or others having odd/inconsistent behaviors?

I'm going to start digging through more testing, I didn't see a lot in the forum.

I love how easy it is to add products and setup Exchange, I hope we can make it work consistently.
